Ingredients:
For the crust:
- 1 cup millet flour
- 1/4 tsp salt
- 1/4 cup of cubed, chilled butter
- 2 tbsp ice water
For the filling:
- 4 large eggs
- 1 cup heavy cream
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup grated cheese
- 1 cup chopped vegetables, such as spinach, mushrooms, bell peppers, or onions
Instructions:
- Preheat the oven to 375°F (190°C).
- To make the crust, in a large bowl, whisk together the millet flour and salt.
- Cut the butter into the flour mixture with a pastry cutter or your fingers until it resembles coarse crumbs.
- Gradually add the ice water to the flour mixture and stir until a dough forms.
- On a lightly floured surface, roll out the dough into a 9-inch (23 cm) pie plate.
- Trim the edges of the dough and prick the bottom of the crust several times with a fork.
- Bake the crust for about 10 minutes or until lightly golden.
- Whisk the eggs, heavy cream, salt, and pepper in a sizable basin.
- Stir in the grated cheese and chopped vegetables.
- The baked crust should now contain the egg mixture.
- Bake the quiche for about 25-30 minutes or until the eggs are set and the top is lightly golden.
