Bajra Roti, also known as pearl millet flatbread, is a popular and nutritious unleavened bread in India, especially in regions like Rajasthan and Gujarat. It’s gluten-free and is often served with various curries, vegetables, or chutneys. Here’s a simple recipe for making Bajra Roti:

Ingredients:

  • 1 cup bajra (pearl millet) flour
  • Water (approximately 1/2 to 3/4 cup, as needed)
  • A pinch of salt (optional)

Instructions:

  1. Prepare the Dough:
  • Place the bajra flour in a mixing bowl. You can add a pinch of salt if you prefer.
  • Gradually add water while kneading the flour with your hand. Start with about 1/2 cup of water and add more as needed to form a smooth and soft dough.
  • Knead the dough well for a few minutes to ensure it’s smooth and pliable. If the dough is too dry, it may crack when you try to roll it out, so make sure it’s soft and well-hydrated.
  1. Divide the Dough:
  • Divide the dough into small portions, about the size of a golf ball. This will make it easier to roll out the rotis.
  1. Roll Out the Rotis:
  • Heat a griddle or a flat pan (tava) over medium-high heat.
  • While the griddle is heating up, take one portion of the dough and roll it between your palms to form a smooth ball. Flatten it slightly.
  • Place the dough ball on a clean, dry surface or a rolling board. Using your fingers, flatten it into a small disk.
  • Using a rolling pin, roll out the dough into a thin, round roti. Keep turning and rolling to ensure it’s even and not too thick. Aim for a thickness similar to a traditional Indian roti or chapati.
  1. Cook the Rotis:
  • Once the griddle is hot, carefully transfer the rolled-out bajra roti onto it.
  • Cook the roti on one side until small bubbles begin to form on the surface, which should take about 1-2 minutes. You can press down gently with a clean cloth or spatula to encourage puffing.
  • Flip the roti and cook the other side for another 1-2 minutes or until it’s fully cooked and has browned spots.
  • Remove the cooked roti from the griddle and place it in a clean cloth or a covered container to keep it warm while you cook the remaining rotis.
  1. Serve:
  • Serve the bajra roti hot with your favorite curry, vegetables, or chutney.

Bajra roti has a nutty flavor and a slightly coarse texture due to the bajra flour. It’s a healthy and hearty alternative to wheat-based bread and is commonly enjoyed in many parts of India.
